| There has been a lot of negative press lately about mineral water. Both of the companies that we use, Hildon from Hampshire, and Antipodes from Whakatane in New Zealand, are Carbon Neutral. Their policies are that their carbon footprint be non-existent, which means that they are not contributing to Global Warming. And they are employing people which we think is positive. We always have London tap water to hand so if you’d prefer to have this please don’t hesitate to ask. | |||

he is getting there, with Decanter magazine stating in 2005 that his inaugural
vintage was the “Best New World White … as good as top Alsace

in the UK to list this remarkable, award winning eau de vie from the only
genuine distillery in the Netherlands. Cloistered within an old fire station
at Varik, a beautiful rural village surrounded by orchards, Henk Raaff
and Bas Lubberhuizen distil only the best freshly harvested fruit –
apples, pears, plums, cherries, raspberries, blackberries and blackcurrants
– into eau-de-vie of the very highest quality. Unlike the usual
factory method, in which industrial alcohol is often mixed with essences,
L&R’s distilling process is still very much a pure craft. |

| Wairarapa If you drive east from the capital city of Wellington,
up and across the Rimutaka Ranges, you descend into the fertile Wairarapa
Plains. Once dedicated farming country, the plains are now partly made
up of clusters of tiny vineyards, with 41 wineries producing an average
of just 2,500 cases a year. The rolling hills to the east form the gateway
to ocean beaches abundant in Paua (black abalone), kina (sea urchins)
and crayfish. Martinborough, with its civic gardens planted in the shape
of the Union Jack, is the town central to the area’s wine industry.
So, although young even by New Zealand standards,
with the first vines planted as recently as 1978, and these first released
only in 1984, Martinborough has quickly earned a reputation for producing
some of the finest wines in NZ. This rests largely on the success of
the region’s Pinot Noir. The twenty metre deep gravel soils have
also allowed a second star to emerge – rich, robust Chardonnay
rivalling many of the vinific world’s more historic sites. With
an annual production responsible for only 4% of New Zealand’s
wine, Martinborough is in more ways than one the antipodean Burgundy. |

| The Providores Restaurant and Tapa Room has one of the largest lists of premium New Zealand wines in Europe. But until now, we've been unable to offer you New Zealand's very best wines by the glass, due to the short shelf life of an opened bottle. After much research, we have chosen the Wine Saver Pro preserving system for our red wines. This relies on Argon gas, which is totally inert and 100% safe. For our white wine selection, we are using the PresorVac system, sealing each bottle by vacuum and pressure pump. We do hope you enjoy this selection of special wines by the glass. Melanie Ellis, our bar manager, will be constantly changing them to allow you to sample some of New Zealand's very best premium wines. | |||
