	There has been a lot of negative press lately about mineral water. Both of the companies that we use, Hildon from Hampshire, and Antipodes from Whakatane in New Zealand, are Carbon Neutral. Their policies are that their carbon footprint be non-existent, which means that they are not contributing to Global Warming. And they are employing people which we think is positive. We always have London tap water to hand so if you’d prefer to have this please don’t hesitate to ask.

2006	Vinoptima Ormond, Gisborne	53.00
	This wine is the creation of Nick Nobilo who hails from one of New Zealand’s most lauded wine families. The Nobilo family sold their eponymous vineyards in 2000, which enabled Nick to pursue his lifelong passion – to produce one of the best Gewurztraminers in the world. By all accounts he is getting there, with Decanter magazine stating in 2005 that his inaugural vintage was the “Best New World White … as good as top Alsace grand crus” Aromatic and pungent wild exotic fruit and Turkish Delight combined with spiced accents of dried apricot and vanilla, golden in colour with luscious aromas of lychee, melon and rose. It has immense fruit-sweetness accentuated by pineapple but with an off-dry finish

Lubberhuizen and Raaff – The Providores are very proud to be the first restaurant in the UK to list this remarkable, award winning eau de vie from the only genuine distillery in the Netherlands. Cloistered within an old fire station at Varik, a beautiful rural village surrounded by orchards, Henk Raaff and Bas Lubberhuizen distil only the best freshly harvested fruit – apples, pears, plums, cherries, raspberries, blackberries and blackcurrants – into eau-de-vie of the very highest quality. Unlike the usual factory method, in which industrial alcohol is often mixed with essences, L&R’s distilling process is still very much a pure craft.

	The Providores Restaurant and Tapa Room has one of the largest lists of premium New Zealand wines in Europe. But until now, we've been unable to offer you New Zealand's very best wines by the glass, due to the short shelf life of an opened bottle. After much research, we have chosen the Wine Saver Pro preserving system for our red wines. This relies on Argon gas, which is totally inert and 100% safe. For our white wine selection, we are using the PresorVac system, sealing each bottle by vacuum and pressure pump. We do hope you enjoy this selection of special wines by the glass. Melanie Ellis, our bar manager, will be constantly changing them to allow you to sample some of New Zealand's very best premium wines.
